Ice Cream Attempt 2- DELICIOUS

Ice Cream Attempt #2= AMAZING! 

Ice Cream attempt #1 was a failure. Second time around, different flavors, it was AWESOME! I wanted to make chocolate and peanut butter together, so I decided to combine them, but I didn't have a recipe. I took ingredients from both and hoped it turned out ok. AND IT DID!!!!

Here is the recipe. Try it. You will not be disappointed. It still needs a name though! You will need an ice cream machine. Mine is a Cuisinart. 



mix cocoa, peanut butter, sugar

Add milk, vanilla, heavy cream

Put in machine for 25-35 minutes

Add chopped peanut butter cups last 5 minutes 

All done & delicious!

Ingredients

  • 1 cup unsweetened cocoa powder (Dutch process preferred)
  • 2/3 cup granulated sugar
  • 3/4 cups peanut butter
  • 1/2 cup firmly packed brown sugar
  • 1-1/2 cups whole milk
  • 3-1/4 cups heavy cream
  • 1 tablespoon pure vanilla extract
  • 4 Peanut Butter Cups, chopped

Instructions

Place the cocoa, peanut butter and sugars in a medium bowl; stir to combine. Add the whole milk and use a hand mixer on low speed or whisk to combine until the cocoa and sugars are dissolved, about 1 to 2 minutes. 

Stir in the heavy cream and vanilla. If not freezing immediately, cover and refrigerate until ready to use.


Turn machine on; pour mixture into freezer bowl, and let mix until thickened, about 25 to 35 minutes. 

Put chopped peanut butter cups in the last 5 minutes.

The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.

Chocolate & Peanut Butter.....my favorite combination!


Funky Chunky Chocolate & Peanut Butter Cupcakes

 Finished product. It is YUMMY right out of the oven with a glass of cold milk!

Layer it up in the cupcake liner!

Ingredients

  • 1-1/2 cups Pillsbury BEST All Purpose Flour
  • 1/3 cup HERSHEY'S Cocoa
  • 1 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup Crisco Pure Vegetable Oil
  • 1 cup water
  • 1 tablespoon white vinegar
  • 1/2 teaspoon vanilla
  • 1 EGGLAND'S BEST egg
  • 1 package (8 oz.) cream cheese, softened
  • 3/4 cup Jif Creamy Peanut Butter
  • 1/3 cup granulated sugar
  • 1/3 cup powdered sugar
  • 1/4 cup REESE'S Peanut Butter Chips
  • 1/4 cup HERSHEY'S Semi-Sweet Chocolate Chips  

Directions

  • Heat oven to 350°F. Place paper baking cup in each of 18 regular-size muffin cups.
  • In large bowl, mix flour, cocoa, brown sugar, baking soda and salt. Add oil, water, vinegar and vanilla to flour mixture, stirring just until smooth (do not overmix).
  • In another large bowl, beat egg, cream cheese, peanut butter and granulated sugar with electric mixer on medium speed until smooth. Add powdered sugar; beat until creamy.
  •  poon 1 level tablespoon chocolate batter into each cup; evenly spread 1 level tablespoon peanut butter filling on top. Repeat layers. Sprinkle with peanut butter chips and chocolate chips.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean (do not overbake). Cool in pan 15 minutes. Remove from pan to cooling rack; cool 15 minutes. Serve warm or cool. 18 cupcakes.
It says 18 cupcakes: BUT....I was able to make 24 cupcakes!!! I guess it just depends on how much you fill your cupcake liners up. I try not to over fill them.

A recipe from Disney: Lazy Weekend Concoction

In honor of my trip to Orlando this weekend,
I figured I would give you a recipe from Mickey Mouse!

Mickey Mouse Chocolate Peanut Butter Oatmeal Cookies Recipe
This is a Disneyland 40th Anniversary Cookie Recipe.


Ingredients



•2 1/2 cup flour
•1 cup sugar
•1 1/2 tsp baking soda
•1 cup packed brown sugar
•1 cup (2 sticks) butter
•1 tsp vanilla
•1 cup peanut butter
•2 eggs
•2 cups semi-sweet chocolate chips (divided)
•1 cup quick oats
Directions


1.Combine: flour and baking soda in small bowl. Beat butter, peanut butter, sugars and vanilla in a larger mixer bowl until cramy. Beat in eggs. Beat in flour mixture. Stir in 1 cup chocolate chips. Freeze until slightly firm but not hard.


2.Roll: dough into 1 1/2 in. ball; press down slightly on ungreased baking sheet. Roll 1 1/4 in. ball; cut in half. Attach to first ball as ears. Repeat with remaining dough; place about 2 inches apart.


3.Bake: in preheated 350 oven for 10 to 15 minutes or until light brown and centers are still soft.
  
Let stand for 3 minute; remove to wire racks to cool.


4.Microwave remaining Chocolate chips: Put in plastic bag microwave on high for 45 seconds; knead.  Microwave at 10-20 sec. intervals, kneading until smooth. Cut a tiny corner from bag; squeeze to pipe chocolate to create Mickey Mouse faces. Allow chocolate to cool.

Lazy Weekend Concoction...Chocolate Bark

This Weekend's Lazy Weekend Concoction:
Lissa Bee's Peanut Butter Cup & Oreo Chocolate Bark

In my head while I was at work yesterday all i could think about was baking. I wanted to make something new, and something I created. My sister Stephanie (check out her blog) had made some fun stuff over the Christmas holiday. She made something similar to what I made. Its a fairly common recipe, but everyone put's their own spin on it!

I wanted something with candy, so thats exactly what I did! Good thing about this recipe, you do not have to measure anything! You just decide how much you want, and that is what you make! I made some extra because I am seeing some friends this weekend, and wanted to share some with them

I love Nestle Tollhouse. You need to get a chocolate baking bar/ or chocolate chips, and I prefer Tollhouse. ( You can use any brand)

Take baking bar, and break up in to pieces. This helps the melting process. Put it in a microwaveable bowl. I used a glass Pyrex bowl. Put in microwave for 1 minute. Stir. Then put in microwave for 15 second intervals, stir each time, until bar is completely melted.

Next, line a pan with wax paper.

 Pur melted chocolate onto prepared pan, spread evenly. Do not spread too thin.

Sprinkle your choice of topping on top. You can use fruit, candy, nuts, pretzles, etc....You choose! I used Oreo cookies, and Reece's Peanut Butter Cups. Take your topping and crush it up. Sprinkle it over on top of the melted chocolate.

Place in refridgerator for about an hour or until firm.

Cut into pieces.

Oreo Chocolate Bark


 Yum Yum! Serve, or store. Enjoy!


What you need:

Baking bar -I used Tollhouse Baking Bar. They come in 4oz bars. I used 16 oz (4 bars). You can use as much or as little as you need.
Pan lined with wax paper
Toppings to sprinkle on

Baking fun back in Pennsylvania!

My older sister Stephanie and I had a little baking party this evening in my mom's kitchen. We were both making homemade, fresh baked from the oven Christmas presents, so we decided to do it together. Here are some pictures of our handiwork and having fun. Lissa Bee's "Better Then Sex" Brownie Bars

My dear friends,

 It occurred to me that I did not put the recipe up for this past weekend's Lazy Concoction. Please forgive me! Here it is! I know the name sounds kind of racey, but believe me, one bite and you'll see why!

Ingredients:


  • 1 box of brownie mix ( I like Betty Crocker Hershey brand best!)
  • 1/3 cup oil
  • 2 eggs
  • 1 cup chocolate chip
  • 1/2 cup peanut butter ( you can add a little more if you want a more peanut buttery taste)
  • 1 14 oz can of condensed milk
  • 1 cup of peanuts (optional)


Directions:


  • Set oven to 350 degrees. Grease a 13x9 pan, set aside.
  • In a bowl mix eggs, oil, and brownie mix until creamy. Stir in cup of chocolate chips. Set aside.
  • In a smaller bowl, mix condensed milk and peanut butter till creamy.
  • In 13x9 pan, evenly spread brownie mixture. Add peanut butter mixture on top and mix around evenly. Make sure it is spread evenly.
  • Add some extra chocolate chips on top.
  • Place in oven for about 25-30 minutes.
  • Set aside to cool
  • Cut into bars and serve!

Lazy Weekend Concoctions

This weekend's Lazy Weekend Concoction:

Lissa Bee's Supreme Buttery Buckeye Brownie Bars


This recipe is sooooooo good! And chocolatey rich! Super easy to make too!


You need a box of brownie mix. I like the Betty Crocker Hershey mix best (not shown in pic), it comes with chocolate syrup!


Mix oil, eggs, brownie mix in a bowl


mix till smooth and set aside, stir in a cup of chocolate chips


 Mix condensed milk and peanut butter in bowl till smooth.


In a greased 13x9 pan, spread brownie mix evenly over pan. Spread peanut butter mix over brownie mix.


Mix them together and evenly in pan


Add some chocolate chip on the top!


Set oven to 350 degrees, and bake for 25-30 mins


 Let cool and cut into pieces, and serve!!!
