rolled sugar cookie recipe

Lazy Weekend Concoction:
Rolled Sugar Cookies

This recipe is the recipe I used for my St. Patrick's Day Shamrock Sugar Cookies. You can use this recipe for any holiday of the year or for any fun sugar cookie cutter project!


Ingredients:

1 3/4 cups all purpose flour
2 tsp baking powder
1/4 tsp ground all-spice
1/8 tsp sat
2 tsp cinnamon ( I added this ingredient)
1/4 nutmeg (I added this ingredient)
1/2 cup (1 stick) butter, soft
1 cup granulated sugar
1 tsp vanilla extract
2 large eggs

**A bowl of cinnmon & sugar to top the cookies with if desired to make cinnamon sugar cookies

Directions:
  • Heat oven to 350 degrees
  • Combine flour, baking powder, all-spice, salt, nutmeg and cinnamon in a medium bowl.
  • Beat butter, sugar and vanilla in a large bowl till creamy.
  • Add eggs and beat till just blended.
  • Mix in the dry ingredients until just blended
  • Press dough into a disk, wrap in plastic and refrigerate at least 30 mins or until firm.
  • Roll out dough on a lightly floured surface to 1/8 inch thickness. ( I did mine a 1/4 inch thick and they came out much better than the 1/8 inch.)
  • Cut out cookies with desired cookie cutter shape. Continue to gather dough, re-roll and continue cutting till all dough is used.
  • Place all cookies on a greased cookie sheet., about 1 inch apart. Bake for about 10 mins or till lighty browned at edges.
  • Cool on sheets till lightly firmed.
  • Decorate as desired!

I rolled my cookie dough in sprinkles before I rolled them so that it was already incorpoated into the dough.
I also sprinkled colored sugar onto my cookie cut outs bfore placeing them in the oven, so that way it is baked into the dough.

**If you want to make cinnamon sugar cookies, dust them with the mixture before baking them.

Lazy Weekend Concoctions:
Great Rainy Weekend Recipe
Chocolate & Almond Biscotti



Ingredients

  • 1 1/2 cups blanched whole almonds
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 7/8 cup white sugar
  • 2 cups semisweet chocolate chips
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons whiskey

Directions

  • Preheat oven to 350 degrees F (175 degrees C). Toast the almonds in a shallow pan for 12 to 15 minutes, shaking the pan a few times, until almonds are lightly colored. Set aside to cool.
  • Preheat oven to 375 degrees F (190 degrees C). Line 2 or 3 cookie sheets with aluminum foil, shiny side up.
  • In a large bowl, stir together the flour, baking soda, baking powder, salt and sugar. Place 1/2 cup of these dry ingredients into the bowl of a food processor. Add about a half cup of the toasted almonds and process for about 30 seconds.
  • Return the mixture to the bowl of dry ingredients and stir in the remaining almonds and chocolate chips. In a large measuring cup, beat the eggs, vanilla and whiskey with a fork to blend. Stir into the dry ingredients until moistened. Wet your hands and divide the dough into four portions. Keeping hands wet, form each quarter into strips about 9 inches long, 2 inches wide and 1/2 inch high. Round the ends. Place two strips crosswise on each of the cookie sheets.
  • Bake for 25 minutes in the preheated oven. If baking more that one sheet at a time, reverse the sheets top to bottom halfway through cooking time.
  • Using a metal spatula remove the slabs from cookie sheets and let cool for 20 minutes on cutting board. Reduce oven temperature to 275 degrees
  • Carefully cut at an angle into slices about 1/2 inch wide. Place the slices, cut side down, onto cookie sheets.
  • Bake 25 to 30 minutes in the preheated oven, until the biscotti is crispy and lightly toasted.
  • Turn oven off and open the oven door, allowing the biscotti to cool in the oven. When cool, store in an airtight container.
Different topping ideas:
You can either leave them plain or you can add a little jazz to them!

You can dip it in chocolate & sprinkle crushed almonds on the melted chocolate.

Or you can drizzle chocolate over top of them!

A recipe from Disney: Lazy Weekend Concoction

In honor of my trip to Orlando this weekend,
I figured I would give you a recipe from Mickey Mouse!

Mickey Mouse Chocolate Peanut Butter Oatmeal Cookies Recipe
This is a Disneyland 40th Anniversary Cookie Recipe.


Ingredients



•2 1/2 cup flour
•1 cup sugar
•1 1/2 tsp baking soda
•1 cup packed brown sugar
•1 cup (2 sticks) butter
•1 tsp vanilla
•1 cup peanut butter
•2 eggs
•2 cups semi-sweet chocolate chips (divided)
•1 cup quick oats
Directions


1.Combine: flour and baking soda in small bowl. Beat butter, peanut butter, sugars and vanilla in a larger mixer bowl until cramy. Beat in eggs. Beat in flour mixture. Stir in 1 cup chocolate chips. Freeze until slightly firm but not hard.


2.Roll: dough into 1 1/2 in. ball; press down slightly on ungreased baking sheet. Roll 1 1/4 in. ball; cut in half. Attach to first ball as ears. Repeat with remaining dough; place about 2 inches apart.


3.Bake: in preheated 350 oven for 10 to 15 minutes or until light brown and centers are still soft.
  
Let stand for 3 minute; remove to wire racks to cool.


4.Microwave remaining Chocolate chips: Put in plastic bag microwave on high for 45 seconds; knead.  Microwave at 10-20 sec. intervals, kneading until smooth. Cut a tiny corner from bag; squeeze to pipe chocolate to create Mickey Mouse faces. Allow chocolate to cool.

Cosomopolitan Truffles


Truffles are a great romantic recipe that anyone will love! These truffles are so good, you loved one will think they were made by a fancy professional baker! They are also easy to make, and it is not a long or hard process! Click the link below for the tutorial and recipe!


Here are  pictures of the ones I did. I just sprinkled some color sugar on top or some mini chocolate chips.
You can use truffles at any holiday, just decorate them to the theme you want!

Chocolate Covered Strawberries


Ingredients you need:


*Strawberries
*Chocolate chips, baking bar (whatever type of chocolate you want to melt to dip strawberries in)
*toppings (if desired)


1: rinse strawberries

2: Dry Strawberries. Melted Chocolate will not stick to the fruit if it is wet.

3. Dip in Chocolate. I used both white chocolate & semi-sweet chocolate. Both turned out great!

4. Place Strawberry on wax paper. I lined a cookie tray with wax paper to make it easier.
Then place in refridgerator to harden the chocolate.

5. If you want a double dip effect, re-dip in chocolate.

6. Place back in refridgerator if re-dipped in chocolate. If you are going to add a topping to stick to chocolate, immediately add topping after dipped into the melted chocolate.

7. Enjoy!

Valentine's Day Edition


Hello friends! As you know Valentine's day is this weekend! Here a some last minute baked good gifts from the heart ideas for a loved one! I made some for work on Friday, and they were a hit!! These posts will be in parts, so brace yourself! It has lots of loving yummy ideas!

 Recipe #1: Surprise Cupcakes

I had a post on this recipe before, but I do not mind posting again! I will be providing the link for the recipe which is on my sister's AWESOME blog!

Surprise Cupcake Recipe


First line cupcake pan with liners

The cream cheese chocolate chip filling. YUMMMMMMMM

Combine cupcake batter in bowl

Pour batter about 2/3 full in to each cupcake liner. Do not over fill.
This will cause cupcake to overflow! Leave room for the filling!

Take a teaspoon of filling and put in center of cupcake batter!

Allow to cool!

Add a heart made of icing for some extra love!

Chocolate Chips & M&Ms! Snowy weekend concoction

Lazy...SNOWY...weekend Concoction!

Hello Friends! We had snowy snowy weekend this weekend. Just because the snow has finally stopped, does not mean you still can't have a snowed in weekend! This week I had to work in the snow. So, I figured I would try to brighten everyone at work's day by bringing in cookies. A majority of my co-workers actually got snowed in at work this weekend....NO FUN!

Here is this super easy, yummy recipe.
 It took me less than an hour start to finish.

First: combine butters, sugar, vanilla.

Add in the dry ingredients, then stir in the eggs.

If you didn't already know, I taste-test every recipe before I give it to people, just to make sure it tastes exactly right! ( or I get my husband too!)

Next, stir in chocolate chips! 

Pop in the oven for around 10 minutes, and set to cool. While the cookies are fresh out of oven, I take M&Ms and push them into the cookie while it is still warm out of the heat. I usually put 2 or 3 M&Ms in each cookie.

Let set, and cool. Ta-da....you have created a yummy & easy dessert!

Lazy Weekend Concoction...Chocolate Bark

This Weekend's Lazy Weekend Concoction:
Lissa Bee's Peanut Butter Cup & Oreo Chocolate Bark

In my head while I was at work yesterday all i could think about was baking. I wanted to make something new, and something I created. My sister Stephanie (check out her blog) had made some fun stuff over the Christmas holiday. She made something similar to what I made. Its a fairly common recipe, but everyone put's their own spin on it!

I wanted something with candy, so thats exactly what I did! Good thing about this recipe, you do not have to measure anything! You just decide how much you want, and that is what you make! I made some extra because I am seeing some friends this weekend, and wanted to share some with them

I love Nestle Tollhouse. You need to get a chocolate baking bar/ or chocolate chips, and I prefer Tollhouse. ( You can use any brand)

Take baking bar, and break up in to pieces. This helps the melting process. Put it in a microwaveable bowl. I used a glass Pyrex bowl. Put in microwave for 1 minute. Stir. Then put in microwave for 15 second intervals, stir each time, until bar is completely melted.

Next, line a pan with wax paper.

 Pur melted chocolate onto prepared pan, spread evenly. Do not spread too thin.

Sprinkle your choice of topping on top. You can use fruit, candy, nuts, pretzles, etc....You choose! I used Oreo cookies, and Reece's Peanut Butter Cups. Take your topping and crush it up. Sprinkle it over on top of the melted chocolate.

Place in refridgerator for about an hour or until firm.

Cut into pieces.

 Yum Yum! Serve, or store. Enjoy!


What you need:

Baking bar -I used Tollhouse Baking Bar. They come in 4oz bars. I used 16 oz (4 bars). You can use as much or as little as you need.
Pan lined with wax paper
Toppings to sprinkle on

Cookies & Cream Fudge

Cookies & Cream Fudge! Last weekend's "Lazy Weekend Concoction!"

So, today it was snowing out, my mood wasn't at is highest.
Baking always cheers me up, so that is exactly what I did. And, boy did it help! I made the recipe I posted last weekend
Cookies & Cream Fudge (click on link for recipe)

Here is my final product!

Line pan with foil....

Crush up 1/2 a cup of Oreo cookies....

Mix together the sugar, butter, and evaporated milk...

Next add the crushed Oreo's, Morels, marshmellow fluff.... 

Stir all together.....

Spread over prepared pan with foil....refridgerate for an hour or until firm....

Cut up into pieces....and tada! You are done!!
