apple pie cupcakes

  • Apple Pie Cupcakes with
  • Cinnamon Vanilla Buttercream Frosting

I had gone apple picking about 2 weeks ago, and made a delicious apple pie. But, I still had about 4 apples left, and I didnt want them to go to waste, so I tried to think of a recipe that sound really good. I was still in the apple pie mood, so I figured, why not try making apple pie cupcakes?

I wasn't sure what type of cupcake flavor to make with the apple. I figured spice was the best. So spice cupcakes with apple pie filling. YUM!

    make cupcake batter, fill about 2/3 of the way.
    Take a scoop of apie pie filling and place in center of cupcake
     My plan was for the applepie filling to sit right on top, but when they came out of the oven, the mixture had sunk to the center, so it was like a surprise in the middle. Its workable!
     Add the buttercream frosting!
     For a finishing touch sprinkle some cinnamon and white sugar on top!
  • Cupcake
  • 2 1/4 cups all-purpose flour
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1/3 cup brown sugar
  • 2 eggs, room temperature
  • 3/4 cup milk

Apple Pie filling:
2-3 apples peeled, sliced and cored
1 1/2 tsp cinnamon
1 tablespoon flour
1/4 cup sugar
1/4 cup brown sugar
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg

Bake at 350 degrees for about 25 mins. Keep an eye on them at the 20 minute mark so they don't burn!

Cinnamon Vanilla Buttercream Frosting
1 box confectioners sugar
3 tablespoons of milk
1 tsp of vanilla extract
1 tsp cinnamon

I made your icing and it was hard and gross! You stink!

I tried your recipe, but the frosting was more of a royal icing than a buttercream. So, I added a stick of butter, and it was PERFECT!! Thank you for sharing!!
