Lissa Bee's Colossal Chocolate Chip Ice Cream Sandwiches

Last night, I was in the mood to make some dessert. I had not gone grocery shopping in like a week. I always have ingredients to make chocolate chips, so I figured I would start from there! My husband was running to get a few things from the grocery store, and I didn't want to send him on a scavenger hunt for ingredients for me, so I told him to pick up vanilla ice cream. I had a vision in my head, and I was going to work with it!

So, I made chocolate chips cookies as I normally would, except this time I used mini chocolate chips. I baked normal cookie portions for the most part, but made a few cookies that were larger than normal.

I left them cool, put some ice cream in the middle, rolled it in mini chocolate chips, and set in the freezer for about 1-2 hours.  The cookie came out so big, we had to split the ice cream sandwich, but didnt even finish it! But it sure was DELICIOUS!!!

Keep in mind, you can always make the cookie sizes smaller. You don't even have to use chocolate chip cookies, you can make your favor cookie, and choose whatever flavor of ice cream , and toppings you want!

Cosmopolitan Truffles Re-post

Here is a yummy dessert re-post. Enjoy!!!!

Ingredients you need:

*Oreo Cookies
*1 package of Cream Cheese (8oz)
*semi sweet chocolate chips
*wax paper
*plastic wrap

Optional ingredients:
*confectioners sugar 
*sprinkles
*Peanut Butter Sauce
*mini chocolate chips
*whatever topping you want!! The choices are endless!!!!

                                         
Main ingredients.....cream cheese and OREO COOKIES!!!!

                                         
You will transform this little round mixture of cream cheese and oreos into something AMAZING!
                    **********************************************************

1. Take 16 oreo cookies, and crush them up. ( A mini ziplock bag helps!)



2. Take one package of cream cheese



3. Combine both ingredients in mixing bowl.


4. Roll into mini balls and place on a pan lined with wax paper.
      


5. Cover with plastic wrap, and place in freezer for about an hour or till firm

6. Melt chocolate chips in microwave or saucepan. I use a my mini crockpot dipper.
Use whatever is easy and effective for you!




7. Cover the oreo-cream cheese balls completely with melted chocolate.
At this time you can also sprinkle toppings on top if you desire!



(covered in white chocolate pieces drizzled on top)

8. Put back in freezer for another hour till firm

9. You can keep them without toppings, or you can make them festive!


10. TADA! You have made yourself a yummy dessert!

What I am currently reading

I am obsessed with Amazon.com. You can get some AMAZING deals on there. I love buying baking books, and other things from Amazon. (but mostly just baking books!)

I'd like to call myself a fine baker, but sometimes it is nice to get tips and ideas from the true and published professionals! I mostly do cakes, pies, cookies and brownies....so i wanted to branch out and see what other confections I am able to make, create and master! I ordered these 3 books on Amazon, I will be getting them in the mail within the week, but they just look AMAZING and I cant wait to read them!

Go on Amazon and check them out for yourself, they are definately worth buying!

Homemade Holiday Gift ideas!

Ok, I hope my family does not read this (and to my family for this xmas, do not steal my idea!!) Here are some great ideas to make a great, adorable, money saving homemade gift from the kitchen!





First, go to a craft store and buy a storage jar. They are airtight, and good to use. I got these from A.C. Moore, and they are about $1.50-$2.00. Take it home and wash it.



Next figure out how you want to decorate it. My mom helped me with some ideas using ribbon. You can use ribbon, stickers, paint.......whatever you want!


Next, pick a recipe. I made a hot chocolate recipe. I did a bunch of taste testing these past few mornings to figure out what concoction of hot chocolate tasted the best. Layer it to give it a fun look.



Then take your ribbon, decoration etc, and arrange it how you want.



Attach a warm felt message or recipe, and you have created a cute, delicious, made from the heart gift!

Hey friends,

This year my holiday budget is a bit tight. Getting married can definately wipe out your savings account! :-) I am opting to make as many homemade gifts as I can this year. Today while I was making some homemade xmas presents, I was trying to figure out to attach a recipe to a gift. I was going to try and hand write them, but I have awful handwriting. So, I turned to my ever-not-incredibly reliable computer for some help.

I found that I could make my own. You know when you how you can make your own invitations at Michaels, A.C. Moore etc? You can buy that in packs? EUREKA! When you buy packs of  Do-It-Yourself RSVP cards, they are the perfect size! So that is what I did! You can make them any way your heart desires! You can add the recipe or put a cute saying or just put on it how to make it!

It is super easy, and help your hand from cramping up!

Anderson Ave Pretzel Melts

Anderson Ave Pretzel Melts


My mom made these cute yummy treats for a holiday party I had at my house last night. They delicious and super easy to make. My mom and older sister Stephanie both know hwo to make them and this is where the recipe came from!

Ingredients: (amount depends on how many you want!)

  1. Mini Pretzels


  2. Chocolate pieces ( can purchase at craft store: Michael's, A.C. Moore)


  3. M&Ms

Directions:

  1. Place pretzels on wax paper on a cookie tray.


  2. Place chocolate piece over each pretzel.


  3. Place in oven at 250 degrees for just a few minutes, watch to look for when chocolate is shiny. You don't want to the chocolate completely melted, only just a little bit!


  4. Take out of oven, and place a M&M in center of melted chocolate.


  5. Let cool, then serve!

Pumpkin Gingerbread Trifle Recipe






Ingredients


  • 2 (14-ounce) packages gingerbread mix
  • 1 (5.1-ounce) box cook-and-serve vanilla pudding mix
  • 1 (30-ounce) can pumpkin pie filling
  • 1/2 cup packed brown sugar
  • 1/3 teaspoon ground cardamom or cinnamon
  • 1 (12-ounce) container frozen whipped topping
  • 1/2 cup gingersnaps, optional

Directions



1. Bake the gingerbread according to the package directions; cool completely. 
2. Meanwhile, prepare the pudding and set aside to cool. 
3. Stir the pumpkin pie filling, sugar, and cardamom into the pudding. 
4. Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl. Pour 1/2 of the      pudding mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding, and whipped topping. 
5. Sprinkle of the top with crushed gingersnaps, if desired. 
6. Refrigerate overnight. 


Trifle can be layered in a punch bowl.

This week's Lazy Weekend Concoction:


Pumpkin Gingerbread Trifle


Hello All! I have an AMAZING recipe for you! This recipe was forwarded to me by a family member (Thanks Aunt Carol!!) It is by Paula Deen, and it is so easy to make. This would make a great Sunday evening dessert! It has to be put in the refrigerator overnight, so it would be great for after Sunday dinner!


I got up VERRRRRRYYY early today to make this for tonight, and it was simple to make, it looks pretty and sofisticated, and taste yummy! You can't lose!





Use Betty Crocker Gingerbread Mix.



Bake Gingerbread according to directions on box. Set aside to cool.



Use Cook & Serve vanilla pudding. Cook according to recipe on box.  Mix on stovetop, bring to boil, and set aside to cool.



After it cools, set ingredients aside. Once cooled, you will combine pumpkin, brown sugar, cinnamon, and vanilla pudding. (not yet!)




Once cooled, take gingerbread cake, break into small pieces and place on bottom of trifle bowl



Now, combine the brown sugar, pumpkin, cinnamon, and pudding.



Then, layer the mix on top of gingerbread in trifle bowl.



Next, place Coolwhip on top of pudding mix.



Repeat the layering process until the trifle bowl is full!



To top it off, place one last layer of Coolwhip on top, sprinkle gingerbread cookies/crumbs on top. I sprinkled cinnamon, nutmeg, and pumpkin pie spice on top.

Enjoy!!!!
