A great summer cupcake! Good for a cook out, luau or even a pool party!! A pineapple themed cupcake, with all the scents of summer.
Take your favorite Vanilla cupcake recipe, and where it calls for water substitute it with pineapple juice (usually it is 1 small can of pineapple juice. You can buy it at any grocery store in the juice isle). Add 1 tsp of rum extract, and 1 tsp of coconut extract. Bake as recipe calls. Top with pineapple butter cream frosting (posted below)
Pineapple Butter Cream Frosting
- 1/2 cup butter
- 4 cups sifted confectioners' sugar
- 1 to 2 tablespoons pineapple juice
- A splash of coconut extract
Top cupcake with frosting.
You can even add some shredded coconut on top, and stick a little umbrella in it for effect!
