National Cupcake day!

Yesterday was National Cupcake day! YAY!!!

So obviously, I made some cupcakes. These cupcakes were actually for a co-workers officer baby shower, and I was asked to make something for the party. Cupcakes are easy for lots of guests rather then cutting a cake.



Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2/3 cup HERSHEY'S Cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups water
  • 2/3 cup vegetable oil
  • 2 tablespoons white vinegar
  • 2 teaspoons vanilla extract
  • Chocolate Chips
  • Hershey Syrup
  • Mini Reese's  PB cup candies
Stir together flour, sugar, cocoa, baking soda and salt in large bowl. Add water, oil, vinegar and vanilla; beat on medium speed of mixer 3 minutes.

I love chocolate, i do. I have an affair with chocolate especially if it is peanut butter and chocolate mixed together! Now to make these awesome cupcakes MORE 'chocolatey'  (if that is even possible), after you are done mixing the ingredients, add two generous squeezes of chocolate syrup and 1 1/2 cups of semi-sweet chocolate chips into the batter. Mix again with a wooden spoon.

Fill muffin cups 2/3 full with batter. Bake 20 to 25 minutes or until wooden pick inserted in cake portion comes out clean. Remove from pan to wire rack. Cool completely. About 2-1/2 dozen cupcakes

Immediately after out of the oven, press one PB cup candy into the center of the cupcake. It gets all melty in the center and is a surprise when a person bites into the cupcake! YUM!

Frosting Ingredients:

1 box of confectioner's sugar
1 tsp van
1/2 cup of melted butter
3-4 tablespoons of milk (depends on how thick you want your frosting to be)
4 tablespoons of Hershey's Cocoa (you can add more or less, i like 4 tablespoons because I love chocolate!)

Decorate as desired!
