Peanut Butter Chunky Thumbkins

One of my wedding gifts was a cookie cooling rack by Wilton. I have always wanted one, but never had one till now. On the package it came with a recipe, and it sounds delicious! Here it is!

Peanut Butter Chunky Thumbkins

Ingredients:

1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1/4 tsp baking soda
1/2 cup solid vegetable shortening
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla extract
1 egg white
1 tsp water
3/4 cup lightly salted peanuts, finely grounded
42 chocolate-covered peanut butter bites

Preheat Oven to 325 degrees

Directions:

In medium bowl: combine flour, baking soda and salt; set aside. In large bowl, beat shortening, peanut butter, granulated sugar and brown sugar with electric mixer until well blended. Add egg and vanilla. Stir in flour mixture; blend well. Shape cookie dough into 1-inch balls. Whisk together egg white and water. Roll dough in egg white mixture, then peanuts. Place on cookie sheets 1 1/2 inches apart. Using thumb, make a small depression in center of each ball.

Bake 10-12 minutes or until golden brown. Remove from oven. Immediately press 1 chocolate covered peanut butter bite in center of each cookie. Cool cookies on cookie sheet 5 minutes. Transfer cookies to cooling grid; cool completely.

Makes about 3 1/2 dozen cookies.
