Classy Raspberry!

Dress up any cupcake with a raspberry! It just gives it such class!
For example take the recipe below: Take your favorite vanilla cupcake recipe. I had cinnamon butter cream frosting on top (DELICIOUS!!!). Then I put some crystal sprinkles on, and added a raspberry for effect. These cupcakes I made for my mom's birthday. 

Lissa's Cinnamon Buttercream Icing:
  • 1 box of confectioners sugar ( or like 3-4 cups)
  • 1 tsp vanilla
  • 1/2 cup of butter, melted
  • 3 tablespoons of milk (you can add more if you want a thinner frosting)
  • CINNAMON! I love cinnamon, so I added like 2 tsp. You can add as much or little as you like.
Throw it all in a box, mix it up, and YUM YUM YUM!

Chocolate Raspberry Truffles

Ingredients

  • 1/2 cup evaporated milk
  • 1/4 cup sugar
  • 1 (11.5 ounce) package milk chocolate chips
  • 1/4 cup seedless raspberry preserves
  • 1/2 teaspoon instant coffee granules
  • 3/4 cup finely chopped toasted almonds (optional)

Directions

  1. In a heavy saucepan, combine milk and sugar. Bring to a rolling boil over medium heat; boil and stir for 3 minutes. Remove from the heat; stir in chocolate chips, preserves and coffee until mixture is smooth. Chill for 1 hour. Roll into 1-in. balls; roll in almonds. Place on waxed paper-lined baking sheets. Chill until firm. Cover and store in the refrigerator.
