Coveted Cannoli Pie Recipe!

Here it is! The coveted cannoli pie recipe. I even considered not posting this recipe! It is a creation of my own, but I decided to be nice and share! So here it is!

Lissa's Cannoli Pie
Ingredients:

15 oz. Ricotta Cheese
3/4 cup sugar
2 eggs
1 tsp. van.
1 tbspn. cinnamon
1/8 tsp. salt
1/3 cup of mini chocolate chips (you can add more or less, depending on preference!)

Heat oven to 300 degrees

Crust:

You can either:
1. Use your own crust recipe
2. Use one from the frozen isle of grocery store.

Combine all ingredients in mixing bowl. After mixing together, pour mixture into pie crust, and make sure it is even. Sprinkle a little cinnamon on top, and place in the oven for about an hour or so. Take out of oven, and let cool for an hour. You can also sprinkle some powdered sugar on top. Serve with nice tall glass of milk!

There you have a cannoli pie!

Today I baked a few cannoli pies. I had discovered them last year when I hosted a bake sale for a fellow officer. When I had researched making them last year, there were not too many recipes. The recipes I did find were not bake recipes, just more of the refrigerated recipes. I was looking for one I could bake in the oven. I continued to research for a recipe that fit the bill. I still had not found what I was looking for.
So, I found my recipe for regular cannoli filling and compared it to the ones I found while browsing the internet. I decided to just sort of combine the two together, and add a few things of my own! After a few taste tests and throwing random ingredients into a bowl, until it tasted just right, I created my own cannoli pie recipe!
I waited patiently for an hour or so while it baked in the oven, and crossed my fingers and toes hoping it would taste normal! I let it cool, and tasted a piece. It was good!
WARNING......THIS PIE IS REALLY SWEET!

Pizzolie? What the heck is that!?

What the heck is that!?



Well, I will tell you! A Pizzolie is one of my personal creations.  When I was trying to figure out how to make cannolis last year, I discovered there was a lot to it. 
So, I decided to make a short cut! 


Why not roll a pizzelle cookie into a cannoli shape?


I tried ever!hing to try to roll them, but nothing quite worked perfectly, and I ended up with lots of burned fingers!


So, I went on amazon.com  and googled cannoli. (P.s. I love amazon, I order lots of stuff on there!) Cannoli Rollers, Cannoli Forms came up. So, I ordered some cannoli form rollers. They were like $10 for 8 of them.








I tried again, rolling the pizzelle cookie. It worked a lot better, not yet perfect. It took a few tries!




Also, to able to even make a pizzelle, you need a pizzelle maker! When I lived in Pennsylvania, I went into the Exton Mall, and bought one at the store called Kitchen Kapers. I LOVE that store, they have so much fun stuff in there!


Mine is called a Cucina Pro, and it was around $50.








The trick is, you can to get the pizzelle off the iron fast before it hardens. In that time you have to roll them so they form around the cannoli mold.


I usually let them sit for a few hours so they can harden a bit. You definately do not want soft shells.

The final product! Look how great they came out. If you do not eat them right away, they should be refrigerated. I'll post the recipe for cannoli filling later!
